Vegetable Hash with Coconut Milk

I demand that every meal have a vegetable, so this was created as a last minute side for Turmeric Coconut French Toast. And if that hadn’t turned out so damn delicious, this would have stolen the show. The caramelized vegetables with the sweet, fatty coconut milk take the place of a compote or jam with the toast, and the combination works so well.


Because it was more or less unplanned, I used the veggies we had in the fridge, which happened to go really well together. Is it a hash if it doesn’t have potatoes? Well, I didn’t have any. And who needs those calories, anyway?


The result was hearty and satisfying without being too heavy. I wish I could eat it every morning.






The Recipe

2 ears of corn 1 large zucchini

1/2 fennel bulb

1/2 yellow onion

2 tsp olive oil

1 1/2 tsp kosher salt

1/4 tsp white pepper (black is fine)

1/2 cup coconut milk

Remove corn from cob and dice vegetables.

Add oil to a pan and heat to medium high. Once hot, add the corn to pan to get a char.

When the corn has browned, add the rest of the diced vegetables. Add salt and pepper.

Stir often. You’re looking for browning on all vegetables.

Once the vegetables are brown and soft, turn the heat down to low and deglaze the pan with the coconut milk. Stir to incorporate.

Taste and adjust salt if necessary. And it’s ready to serve!


Notes and Substitutions

  • I encourage you to use what’s in your fridge, but this is a great, super summery combo.

  • The reason I put the corn in first is that it’s the most important to really brown. Ideally, all the veg will get color, but without that sweet, nutty corn, it wouldn't be nearly as good. I ask you, what is as good as caramelized corn?

  • The coconut milk should absorb into the veggies. The finished dish will be moist but not saucy.

  • If you’re looking for extra flavor, I think a garlic clove or some garlic powder would be good here. It doesn’t need it, though.


We ate this for dinner, but it’s definitely ready to be a brunch dish as well. Breakfast for dinner always feels a little transgressive, which makes it that much better. You’re an adult—no one can tell you when it’s French toast and hash time! Except I’m telling you right now that it should be as soon as possible.
